Vata Balancing Recipes
Food is one of the primary means to keeping our bodies healthy and balanced in Ayurveda. Eating seasonally and making dietary choices based on our dosha imbalances can help us feel our best throughout the entire year. In Ayurveda, fall is Vata season, the season governed by air and space. During this season, it’s important to incorporate warming, moist, and heavy qualities to offset the cold and dry nature of this dosha. To eat your way to a nourishing and balanced Vata season, follow these simple Ayurvedic recipes.

Warming Golden Milk (Serves 2)


Ingredients:
  • 2 cups almond milk
  • 1 cup filtered water
  • 2 tbsp maple syrup
  • 1 tsp turmeric
  • ½ tsp cinnamon
  • ⅛ tsp black pepper
  • Tbsp ghee

Directions:
  1. Add your almond milk and water to a medium sized pot over medium low heat. Add the maple syrup, turmeric, cinnamon, black pepper, and nutmeg. Whisk to combine.
  2. Heat the mixture on a low simmer for around 5 minutes.
  3. When finished, remove from heat and allow to cool slightly.
  4. Strain the mixture if you desire, otherwise, stir in the ghee and divide into two mugs. Top with a sprinkle of cinnamon and serve fresh.

Potato Leek Soup (Serves 4)


Ingredients:
  • 2 tbsp olive oil
  • 2 cloves minced garlic
  • 1 small diced white onion
  • 6 cups vegetable broth
  • 4 cups white potato chopped into cubes
  • 2 large leeks chopped
  • 1 cup coconut milk
  • tsp dried oregano
  • tsp dried thyme
  • ½ tsp paprika
  • salt and pepper to taste

Directions:
  1. Warm olive oil at the bottom of a pot. Add garlic and onion and saute until golden brown.
  2. Add the vegetable broth and bring to a boil. Add the potatoes and cook until soft.
  3. Transfer the mixture to a blender and pulse a few times until the mixture is smooth with chunks of potato still remaining. Pour it back into the pot and bring to low heat.
  4. In a separate pan, sauté the leeks until golden brown. Add them to the pot along with the coconut milk, thyme, paprika, salt and pepper.
  5. Top with your favorite oil or ghee and some green onions. Serve fresh and enjoy.

Cocoa Date Balls


Ingredients:
  • 10 dates pitted and chopped
  • Tbsp cocoa powder
  • 1 cup chopped walnuts
  • Tsp cinnamon
  • Sprinkle of sea salt

Directions:
  1. In a large bowl, add chopped dates and mix with cocoa powder, walnuts, and cinnamon.
  2. Mix the ingredients together, and form one inch in diameter balls with the mixture and place on a tray.
  3. Serve fresh or store in the refrigerator to snack on later.
